Grandma's Hamburger Barley Stew

- 1 lb. ground beef
- 1 medium onion, chopped
- 48 oz. (3 pints) beef broth
- 28 oz can tomatoes, diced or crushed
- 1 can (14.5 oz) creamed corn
- 3 carrots, sliced
- 3 celery ribs, sliced
- 1/2 cup barley
- 1 bay leaf
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1 tsp. cilantro
- 1 tsp. salt
- 1/2 tsp. pepper
- Brown beef and onion in skillet.
- Combine all ingredients in slow cooker.
- Cover. Cook on High 3 hours, or Low 6-8 hours.
Sloppy Joe Sandwiches
- 1 lb. ground beef
- 1/4 cup chopped onion
- 1/2 teaspoon garlic powder
- 1 teaspoon prepared mustard
- 3/4 cup ketchup
- 3 teaspoons brown sugar
- salt and pepper, to taste
- Brown meat and onions.
- Add remaining ingredients.
- Serve on bread or buns, with cheese, tomato, lettuce, or pickles.
Busy Mom Hint: Make several batches at a time, and freeze in meal-size portions!
